Are you tired of the same old Mexican rice? I know I’m getting a little bored of mine because I make it with nearly every Mexican meal, so I decided to switch things up a bit. This recipe could also be called guacamole rice because it tastes just like so. I love it though because I always find myself dolloping a generous amount of guacamole over my Mexican rice all the time.

Aren’t we all always on the lookout for a quick and easy, healthy lunch, one that isn’t boring. This rice is just what I’ve been looking for. It begins with brown rice, then it’s covered in a creamy avocado, vibrant cilantro and a zesty lime mixture. It requires minimal ingredients but together they create something completely delicious! Really though, if you say the word avocado, I’m in. I just love avocados! Lately I’ve just been mashing them up and slathering them on my toast in place of butter and surprisingly enough it tastes incredibly good. I think it’s safe to say they are one of the worlds best ingredients.

Avocado Cilantro Lime Rice

A delicious upgrade on plain brown rice. You'll love this bright and creamy cilantro, lime and avocado addition!

Instructions

  • Mash avocados in a large mixing bowl. Stir in lime juice, cilantro, cumin and garlic, then season with salt and pepper to taste. Stir in warm cooked rice and serve warm.

    Hey, just wanted to tell you that this recipe is the BEST. I am so happy that I even came across this recipe. (Pardon me for any typos I am kind of tipsy) Today has been AWFUL. My bike got stolen (while I was getting the cilantro for this recipe, haha), the bylaw officer came by this morning and told me some bad news, blah. Just an awful day. But this rice recipe truly made my night amazing. I mixed it with some chicken and green onions and my partner and I had a fantastic dinner. Thank you so much for this recipe. It quelled our moods and I feel much better for it. Fantastic guacamole-rice.

    Why brown rice ? Can I use regular white rice ?
    Today I going to try it with my fish tacos and black beans.

      I just used it since it’s more nutritious than white but white would be just fine. Hope you love it!

    I think it’s not good way for using rice cooker. It’s much better for multicooker, I use Redmond 4502 for it, because the recipe enough difficult and It is so simple to do it in the wrong way! But it is very great! Everyone should try it! ^____^

    My husband HATES rice! When he does end up eating it (to make me happy and show our daughter to be grateful for food) he still doesn’t like it. I tired this recipe a few time and he actually didn’t complain :) everyone else LOVED it! Thanks
