Mini Chocolate Chip Cookie Bites

My daughter put in a special request today for tiny chocolate chip cookies and tiny cupcakes (I finally found a tiny cupcake tin (smaller than a mini) at a local kitchen supply store so it’s a frequent request at our house). Since I love all things mini I decided why not, especially if it means I get to eat chocolate chip cookies. I also recommend using mini chocolate chips so they don’t overwhelm the tiny cookies.

I have to tell you, these are definitely one of my new favorite ways to enjoy chocolate chip cookies. They are just so pop-able and incredibly hard to resist!

You’ll think, okay I eat like 10 (that sounds like a lot, but remember these are bite-size), but no way is that going to happen. I set 10 in front of me but then just kept reaching for more and quickly lost count.

So yes, these are quite dangerous. Not to mention they taste like the perfect chocolate chip cookie. They are soft, chewy, and moist and they have a generous amount of chocolate (which is always a must right?).  I used to always be into the large bakery-size chocolate chip cookies but now I’ve finally met my match.

This chocolate chip cookie recipe does make a ton, but remember they are tiny so you still just might want to double it especially if you are making these to take to a party. You can never have too many mini chocolate chip cookies!

I recommend having someone help you roll these just to make things go faster since there are so many (one person can handle the cookie scoop, and the other person can roll the cookie dough balls and place balls on the silicone mat or cookie sheet). Allowing the cookie dough to chill will make it easier to shape, but room temperature is ok too.

If you have kids around, I promise you they’ll love to help. A rubber spatula is easy to use for placing them on the baking trays and removing them after cooling. My kids couldn’t get enough of these. The highlight of their day for sure! Mine too :).

I’m itching to layer some ice cream between these tiny cookies for bite-sized ice cream sandwiches!

Chocolate Chip Cookie Bites

These are the funnest tiniest chocolate chip cookies you'll ever have! They're perfectly poppable and incredibly irresistible and people of every age will love them! Makes approx. 144 bites.

  • Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cornstarch, baking soda and salt for 20 seconds, set aside.
  • Place butter in a microwave safe bowl, heat in microwave on HIGH power until butter has melted halfway. Remove and whisk until fully melted. Pour butter into the bowl of an electric stand mixer.
  • Add brown sugar and granulated sugar, fit mixer with paddle attachment and blend mixture on medium speed until well combined. Mix in egg and vanilla extract. With mixer set on low speed, slowly add in dry ingredients and mix until combined. Stir in chocolate chips.
  • Scoop dough out a slightly heaping 1/2 tsp at a time and drop onto plates (wax paper, whatever). Shape each into a ball, then if desired press 3 - 4 more chocolate chips into top (totally optional, mostly for looks...and more chocolate).
  • Align on two parchment paper or silicone baking mat lined baking sheets, spacing 1-inch apart. Bake in preheated oven about 5 - 6 minutes (they should still fill soft and slightly under-baked, they will continue to cook slightly once removed from oven so carefully not to over-bake).
  • Remove from oven and cool on baking sheet several minutes then transfer to a wire rack to cool. Store in an airtight container.

    I don’t know what I did wrong didn’t even melt the butter all the way and this dough was so runny there was no way to make these into balls I have placed it in the fridge so hopefully I can at least scoop it out of the scooper!! Not even done yet and I’m disappointed in this recipe!

    I’m really disappointed with this recipe. I followed it to a t and the cookies came out so flat you can’t even hold it. They look like pancakes. I make cookies all the time for my business and wanted to make these for a party and it was a massive waste of my time I won’t get back. I’m trying to click 1 star but it doesn’t seem to let me so if the review shows 5 stars it’s inaccurate.

    I used room temperature butter this time and these were better than the batch I made by melting the butter.

    Awww another recipe that looks nothing like the picture, mixture was runny as so left in fridge and they are flat as a pancake, this recipe needs to be removed!!

    Might be an idea to actually write in the steps that the dough needs to rest and firm up, had the same issue as another user that the dough was far too runny so added a few tbsp more flour and they are more domed rather than the normal cookie texture. Had to read the comments after the fact to find that the author suggests letting the dough rest to firm up.

    Cookies came out too soft to hold. Should have added some baking powder to help with texture. Disappointed

      Sorry to hear this, perhaps they need to bake a bit longer or needed a little more flour. Baking powder can often make a cookie cake-y/ puffier and therefor softer so not sure that would be the option you are looking for.

    I made these and they came out super salty. So i left out the salt thinking thay with the baking soda was too much. I also only added 1/4 tsp baking soda. They are still way too salty.. what am I doing wrong??

      Sorry to hear this! Are you using salted butter or unsalted? If using salted butter just omit salt from the recipe completely as there is about 1/4 tsp salt per stick of butter.

    One batch made 40 cookies! I shaped the cookies using 1 tsp of dough instead of 1/2 a tsp and added 1 min extra cooking time. It can take time to roll, so this was my quick fix. They were tasty little treats, and it’s easy to eat 3-5 at a time!
