There’s nothing like cozying up in your pj’s and slippers and settling down to a warm holiday breakfast full of freshly squeezed orange juice, hot-from-the-oven perfectly crisp bacon, soft scrambled eggs that are loaded with cheddar, and a tall stack of warm pancakes slathered with butter and drenched in maple syrup.

One of my favorite parts of Christmas when I was younger was always the breakfast my mom made. She didn’t make a hot breakfast often—we were much more of a dry cereal family—so a hot breakfast like this was a big deal to me.

And bacon to this day still reminds me of Christmas morning! Then I’m reminded of how many oranges it took me and my siblings to squeeze by hand with one of those twist-to-juice thingamajigs (manual juicers) to get enough juice for my mom and all 6 kids.

Good times though. Christmas morning is hands down my favorite morning of the year, so a seriously incredible breakfast is a must!

But really, don’t wait until Christmas to make these incredibly soft and fluffy eggnog-flavored pancakes! You need to make a trial batch like three times before, right :)?

With Thanksgiving coming up next week, if you are having guests stay this also makes for an impressive, yet unbelievably easy breakfast to make for them. Who wouldn’t love a tall stack of these? Me and my family were in heaven devouring them.

How to Make Eggnog Pancakes

Start by whisking together your dry ingredients evenly in a large bowl. Next, stir your wet ingredients together in a different bowl until smooth with small bubbles. Then you can add your wet ingredients to your dry ingredients to create your pancake batter.

Note that the recipe makes thick pancakes, at least mine were very much so. So you can add more of the eggnog if you want to thin them out which I think I may do next time because I’m somewhere in the middle of thick and thin.

Finally, use 1/3 measuring cup to portion your pancakes. Scoop a cup of batter onto your greased griddle and smooth it into a circular shape. Flip once the bottom is golden brown and starting to release from the griddle surface.

I like to store my finished pancakes on a baking sheet with a layer of wax paper to prevent sticking. I also use wax paper between leftovers and store them in an airtight container in the refrigerator or freezer. You can quickly heat them in the microwave or toaster for breakfast tomorrow!

However you choose to make them, trust me, you are going to love them!

Ingredients

Instructions

  • Preheat and electric griddle to 350 degrees. In a mixing bowl whisk together flour, baking powder, salt and nutmeg. Make a well in mixture then set aside.
  • In a separate mixing bowl, whisk together eggnog, eggs, butter and rum extract until well blended. Pour wet mixture into well in dry mixture and whisk just until combined (small lumps are fine).
  • Pour about a heaping 1/3 cup onto buttered griddle (vegetable oil works fine too if you don't like the fact that the butter can burn quickly), spread batter into an even round (just using the bottom of measuring cup).
  • Cook until bottom is golden brown then lift, butter griddle once more, flip pancake and cook opposite side until golden brown. Serve warm with butter and maple syrup.

So, I tried these a few weeks back and they were amazing. The only I hanged was I made the eggnog from scratch, as I didn’t have any on hand! Omgosh, they were amazing… this morning I’m using store bought eggnog, and I’m sure they will be amazing as well! Thank for this wonderful recipe!!!

Your photos are beautiful and your recipe was a hit with the whole family! I wanted to try them out before making them for company on Christmas morning. I added slightly more eggnog to the mix so I could pour the batter in my waffle iron. Used vanilla instead of rum extract. They turned out wonderfully. Made 5 1/2 round waffles. This will be perfect for Christmas breakfast. Thank you for sharing this awesome recipe. :)

Just wanted to give an update on my comment from 2015. This is our third year making this recipe and has become a Christmas breakfast tradition in our home. They are simple to make and everyone always raves about them. I add a bit of ground cloves to the mix to make them extra special. Thank you for sharing this recipe.

I love this so much! Thanks for reporting back and Merry belated Christmas!

This recipe is amazing! Thank you so much! I did not have rum extract, but made the pancakes anyway, and they were still amazing. :-)

I just tried these and they were so thick the bottoms burned before they were strong enough to flip. I added more egg nog so they were thinner and they now bunch up when I try to flip them… any thoughts on what I’m doing wrong?

Hello! I’ve had this issue before, try using a lower temperature. Hope this helps!

I love super thick, fluffy pancakes! They’re like eating layer cake for breakfast. These are perfect for me.

These are delicious! I made a few small changes to suit our preferences (e.g., vanilla extract instead of the rum), but the recipe is pretty perfect just the way it is. I used lowfat eggnog so the batter consistency was just fine with 2 cups. Thanks so much!

Pancakes are one of the things I tend to have issues photographing. Your photos are absolutely beautiful! I will definitely have to try these.

These look wonderful! I can’t wait to try them. Your pictures are so pretty, too!
