Ingredients for This Green Bean Side Dish Recipe

  • Fresh green beans
  • Butter
  • Garlic
  • Walnuts
  • Dried cranberries
  • Lemon
  • Salt
  • Feta

How to Cook Green Beans for Thanksgiving

  • Bring a pot of water to a boil. Add green beans and boil 3 – 5 minutes until tender crisp. Drain then immediately rinse under cold water. Drain well.
  • Melt butter in a large skillet over medium heat. Add garlic and saute 1 minute. Add in drained green beans and saute 1 minute or until heated through.
  • Toss in walnuts, cranberries and lemon juice and season with salt to taste.
  • Sprinkle in feta and lemon zest. Serve warm.

    The recipe was nice but make sure you let the beans cool down before adding the fetta or it goes a bit mushy. Tasted good though.

    Hi Jaclyn, I recently tried and loved this recipe. Thanks for sharing. I would love to serve this for Christmas lunch with those lovely colours, textures and flavours but being in Australia we are having cold food. Do you think it would work as a cold dish?

      Yes definitely. I may switch to olive oil though so the butter doesn’t solidify.

      The first time I made this delicious salad, I didn’t use butter or garlic powder & didn’t heat everything in the pan together. I was looking for a cold green bean salad, so i cooked the green beans for 5 mins but immediately put them in ice water so they wouldn’t cook any longer. Then i drained them and added the cranberries, pecans & some sweet Vidalia onion. I made the dressing with maple syrup (instead of honey) just like the recipe. But i didn’t pour the dressing or feta on the beans till right before I served them. It’s absolutely delicious cold! But you dont want the beans to be too done because they need to be a lithe crisp. There’s an orange vinaigrette here on Pinterest I think would go great with this too!

    These look delicious and I would just love to try them but I hate hard crispy green beans…How long do you cook for a little softer texture without being over done ??

    I substituted the cranberries for fresh pomegranate (that’s what I had). It was yummy, and very well appreciated by almost everyone (my brother doesn’t like crunchy vegetables).
