Easy Homemade Peanut Brittle

You wouldn’t believe how easy it is to make this Microwave Peanut Brittle. Not only that but it has the perfect texture and it tastes delicious! No one will even know you made it in the microwave.

It will make a perfect last-minute gift for that friend or neighbor on your list, or for yourself of course!

If you like your peanut brittle to have more of the meltaway effect, I like to spread it as little as possible so it’s light and crisp. If you like it more of the traditional way just spread it out thin. Either way, you are going to love this!

Ingredients for Peanut Brittle

  • Granulated sugar
  • Light corn syrup
  • Salted peanuts (unsalted works too just wait to add 1/4 tsp salt at the end with baking soda) or other nuts like pecans, almonds, or cashew
  • Butter
  • Vanilla
  • Baking soda

There are some tools that are necessary for making peanut brittle. I recommend having as many of these tools on hand as you can!

  • Large microwave-safe bowl, glass bowl or plastic
  • Cooking spray
  • Cookie sheet
  • Silicone spatula
  • Oven mitts
  • Candy thermometer
  • Airtight container for storage
  • Parchment paper

  • Cook times may vary slightly depending on microwave wattage. Watch for a golden brown color near the end.
  • Reviewers have mentioned trouble with this recipe in recent years. I believe this is due to microwaves being made with higher wattages.
  • A newer watt microwave should have 30 seconds cut from each cook time.
  • Note that the less you spread the mixture, the lighter the brittle will be, or the more air bubbles it will have, so if you prefer it like so then do as little spreading as possible. If you prefer it flatter then spread it out thin on your prepared baking sheet.

    I love this recipe, my sister made it and it was chewy and light, I could not get enough. She gave me the recipe but mine is not soft and it is always to dark. Do you think the roasted peanuts make it dark? I have a high wattage microwave so I cut the time back a few seconds, I didn’t spread it and it is still too dark.

      It should come out crisp and crunchy not quite chewy. But it shouldn’t be very dark, if so it is likely cooking too long so I’d cut back on the time even more. Or you could maybe try cookign on 80 or 90% power. Hope that helps!

    My microwave is a700 watt oven. The last time i made this it didn’t turn out right🥜 . I’m thinking it’s due to the Low wattage of the microwave? I’ve made this for years but in a 1000 watt oven. Could the problem be with the microwave wattge?

    I didn’t scroll down to the recipe notes (duh) and it cooked about 30 seconds too long for my brand new microwave. 😉 We will eat it, I’m sure, but it has a little bit of a scorched taste. I’ve never before used a recipe that had three cooking times.

    This worked great as I did follow directions. Can this batch be doubled? It truly doesn’t make much though. I used my smallest cookie pan and still only covered maybe 1/2. And if I wouldn’t have to make 4 batches to get a decent amount would be great. Thanks.

      I haven’t tested so I can’t say for sure. It could probably be done in a very large bowl but time may need to be increased slightly.
